A sweet, tart, fresh, sugar-free cucumber pickle to enjoy all summer. The pickles go great with everything from meats to salads and sandwiches.

 1 1/2 cups Water
 1/2 cup White vinegar
 10 whole Peppercorns
 1 English Cucumber
 1 tablespoon Kosher Salt
 1 clove Garlic
 1/2 cups Xylitol Sweetener
 1 tablespoon Mustard seed
 1 tablespoon Celery Seed
 1 teaspoon Dill

Slice cucumber into rounds approximately 1/2 cm thick.

Place the cucumber in a large bowl and sprinkle with the salt. Toss so that the salt is distributed evenly. Allow to stand at room temperature for two hours. Drain the cucumbers in a colander.

Bring remainder of the ingredients to a boil over medium-high heat. Add the cucumbers and remove from heat.

Allow pickles to cool and then bottle.

Store in fridge.
